This happy accident occurred last week when I found myself with an abundance of cilantro. I hate wasting fresh herbs and pesto sauces are a great way to add flavor and health building benefits to your meals. Traditional pesto’s call for parmesan cheese – – and while that’s all fine and good, I don’t think it takes away from a pesto to skip it. Using pesto to marinate chicken or fish is absolutely delicious as well. Cilantro is a detoxifying herb and helps shuttle heavy metals from the blood. So that’s good, right? But basically, it’s delicious.
I didn’t include this in the recipe below but cayenne pepper adds some lovely heat to this.
