I was busy testing another recipe idea that required a grain free base. The recipe I tested didn’t totally work out but a few people requested I share the cake recipe so here it is! Cauliflower is part of the cruciferous vegetable family – it is hearty and resilient. As they say, “you are what you eat” and that here is true. Cauliflower and all cruciferous veggies are powerful anti-cancer foods that will reinforce YOU to be hearty and resilient. Loaded with vitamin C, Potassium and calcium to help support your immune system and bone health. But aside from all that nerdy stuff, cauliflower, especially riced, makes a super alternative to rice, grains, and bread because it’s relatively mild in flavor, is low in carbohydrates, and still has protein and fiber.The purple and orange varieties taste the same but pack some extra antioxidant power.
Try out these cauliflower cakes that pair well with eggs instead of hashbrowns. I had them for lunch today with ground turkey meatloaf.
