Truth be told, I was making this recipe for work, but my parents are in town and they are vegetarian. So I created this meat free version for them. In my experimentation, I actually loved the vegan version better than the paleo/meat version myself. Both were delicious but this was really flavorful. Perfect for your next meat free meal. These save really well in the fridge or freezer for batch cooking and are easily done in a slow cooker.
These are packed with veggies and healthy fats but are hearty and filling. I actually used a cheat here (what? me? cheat?) and used some Seeds of Change organic brown rice with quinoa ready to go rice as a base but you could very well use home cooked brown rice and or quinoa here. This just cut the cooking time down and truthfully (for real, I’m tired ok?), I love how they taste. If you’re a purist or hate microwaves – steam up your brown rice and season with sea salt and garlic.
